Most planet-host stars will one day evolve to become white dwarfs. What happens to their planetary systems? Observations of planetary material in the atmospheres of polluted white dwarfs provide the strongest evidence for what happens to planetary systems. In this talk I will discuss the evolution of planetary systems that leads to planetary material in the atmospheres of polluted white dwarfs, particularly focussing on what infrared observations can tell us about how the accretion occurs.
